Healthy Snack: No bake Fig & Date Snack Bites

We know grabbing that bag of chips or prepackaged bar seems easy but most likely what you are putting into your body is not healthy. What if we told you that you could make your own healthy snack option for the week in about 20min, plus you would know exactly what you are putting into your body. Would you be interested?

Just like you, many of our clients are interested in various snack options to choose from. Sometimes clients seem baffled when it comes to choosing a healthy snack beyond grabbing that piece of fruit and/or vegetable. These are great options but for some can get boring rather quickly.

The six ingredient no bake recipe below is an easy, quick way to prepare yourself a healthy snack at home. Great for in between meals, right before heading the gym, or on the go. Be careful they are addicting.

No Bake Fig and Date Snack Bites

INGREDIENTS:

  • 6 ounces dried figs
  • 4 ounces pitted dates
  • 1/4 cup natural peanut butter (or substitute your favorite nut butter)
  • 3/4 cup oats
  • 1/4 cup ground flaxseed
  • 1 teaspoon of vanilla (optional)
  • 1-4 tablespoons water

DIRECTIONS:

  1. Place all of the ingredients (except the water) in a food processor. Pulse to combine and scrape down   the sides of the bowl if any sticking occurs. Continue to pulse until all the ingredients are mixed thoroughly and it begins to clump. If the mixture does not begin to clump and appears as if it will not hold once rolled into a ball add 1 tablespoon at a time of water. Do this until mixture clumps and appears sticky.
  2. Use a spoon to portion the mixture, roll in your hand to create small bite size balls, about 1 inch in size. Store in an airtight container in the refrigerator for up to two weeks.
